Dark Chocolate No Bake Cookies

Usually summer brings the joys of baking summer treats with fresh berries and light, refreshing flavors. However, lately the temps have been topping the charts at 106 degrees and the last thing I want is to heat up the house by turning on the oven. So when I had a sweet tooth I dug into my family recipes and came up with the No Bake Cookie. It’s been a family favorite for as long as I can remember. My version uses a bittersweet dark cocoa powder which gives them a deep, decadent chocolate flavor, but you can use any cocoa powder you happen to have on hand.

Summer is the perfect time for no bake cookies, and this recipe only takes about 20 minutes from start to finish. Plus it’s really hard to screw up a no bake cookie. Trust me, I’ve tried.

First, break out the butter and milk…

…slowly mix in some Dark Chocolate Unsweetened Cocoa and White Sugar.

When you get to the boil stage, start the timer. This is the hardest part, and it needs to be pretty close to exact.

Let it boil for 90 seconds, and keep stirring.

Immediately take it off the heat and add the Peanut Butter. After the PB melts, you can add the Oatmeal and Vanilla. Within a minute or so it will start to thicken. If it’s a little too runny, add a bit more oatmeal. Don’t go overboard, you don’t want the mixture dry, just thickened.

A note about the peanut butter. I’m not a huge fan of peanuts in my cookies and brownies, so I tend to use creamy versions when baking. However, you can use any type of peanut butter that you have on hand. I used Skippy Natural Creamy for this recipe, but in the future I may experiment with flavored peanut butters, like PB & Co., Dark or White chocolate PB.

Drop spoonfuls of the cookie mixture onto wax paper. I recommend using a cookie scoop, but 2 spoons works well too.

I understand if you feel the need to test it out now, I always leave a little in the pan for testing…ya know, just to make sure it’s safe for others…yeah yeah, that’s it.

Try to stop licking the spoon long enough to stick the cookies in the fridge. As good as they are now, they’ll be even better tomorrow.

Dark Chocolate No Bake Cookies

Approximately 35 cookies

1 stick butter

2 cups sugar

1/2 cup milk

3 Tablespoons Unsweetened Cocoa

1/2 cup Peanut Butter

3 1/2 cups regular rolled oats (Instant will also work, but I prefer the regular for the size of the grains)

2 teaspoons Vanilla Extract

1. Combine the butter, milk, sugar and cocoa in a large pot over medium-high heat. Bring to a boil, stirring constantly. Boil for 90 seconds and immediately remove from the heat.

2. Stir in the Peanut Butter. Once melted, add the oatmeal and vanilla.

3. Place spoonfuls of the cookie mixture onto wax paper and refrigerate until set, about 30 minutes.

Vacation Intentions

Most days last week I worked an average of 12 hours per day, and even though I work from home, it is still exhausting. But it means something important…I’m on VACATION!

I can’t tell you how much I need this time off, I want to feel like I can breathe again. My job suffocates me. This is my first day off (minus the weekend) and I woke up to at least 30 new emails flashing on my phone. The stress immediately made me physically ill, like most workdays, and I wanted to run away so badly. I took my dog for a walk just to get away and spent over half the walk in tears about work. Yes, I was that crazy crying lady walking down the street, and I’m not ashamed. I imagined how freeing it would be to call my boss and quit, how I could finally breathe again without this heavy feeling tightening around my chest. How I could finally wake up in the morning without dread of being yelled by people who don’t know how to do their job. Unfortunately it’s not as easy as just quitting for me. When I leave I have to immediately pay back a major loan which I obtained when I bought my house, and I don’t have the money to do that. Until then, I’ll continue crying because it makes me feel better, I’ll keep writing in hopes that I can finally realize my dream of becoming a successful novelist/screenwriter, and I may even buy a lottery ticket (you can’t win it if you don’t play).

…and I created my Vacation Intentions…

  • Sleep In and Nap, every chance I get

I need more sleep. I took the Epworth Sleepiness Test and it indicated that I may be significantly sleep deprived and that I should seek help from a sleep specialist immediately. Yeah, I’m not going to do that, but the result doesn’t really surprise me since I constantly feel exhausted after work and on weekends. Hopefully during my vacation I can get into a regular sleep schedule and stick to it once I’m back at the office.

  • Rejuvenate the House

I have big plans for my house this week. I hope to get the Studio painted for the Spring Cure as well as the Master Bathroom. I also want to spray the house for bugs, install a new printer, and finish painting the kitchen and living room. Below is a snapshot of the living room wall. The room is still in progress so I’ll share more in a separate post.

Long leisurely walks every morning, hourly belly rubs, and afternoon swims in his ‘kiddie’ pool…that’s his dream life. I’ll do the best I can  little pup!

Build A Bar with YouBar

I’ve got mail!

I have to admit that I have an addiction…

It’s painful to share, but admitting you have a problem is half the battle, right?

I have a Groupon addiction! Seriously!

A recent purchase was a $25 Gift Certificate to YouBar via Groupon, where you can design your own custom energy bar.

Let’s just say I had waaaayyy too much fun creating my energy bar. In the end I created the CherryOrchid “Chocolate Cherry Coconut” energy bar.

I love getting mail. However, it would have been nice if the package delivery man had knocked on my door so I knew a package had been delivered. Then it wouldn’t have sat on my doorstep…in the sun…in 104 degree temperatures for who knows how long.

I had to stick them in the fridge for a bit to undo the sun damage, they were a little melty when I broke into my first one. Aside from that, it was chocolate cherry coconut goodness.
